Já tentaste meter hardcoded no ficheiro /etc/grub.d/05_debian_theme?
Onde tens: if [ -z "${2}" ] && [ -z "${3}" ]; then echo " true" fi Metes:
if [ -z "${2}" ] && [ -z "${3}" ]; then echo " true" echo " set color_highlight=light-blue/black" echo " set color_normal=white/black" fi Tens várias cores que podes exprimentar. Depois fazes update ao grub.
sudo update-grub
